You need to stop or coast for at least 30 seconds (by default, you can adjust this up to 180 secs) for the HR ramp test to be valid. It tells you how quickly your HR is dropping, and writes that to the FIT file. This is a GREAT indicator of your fitness and your body's stress level during an extended activity. Your HR Recovery Rate will be less as you get fatigued, dehydrated, etc. Or, over months, if your cardio health is compromised (arterial blockage for example). NIH suggests this metric is an indicator of a serious risk if it drops from your nominal levels over time.
